Komkommernoedels zijn een ideale lunch. Ik vulde het aan met een restje pasta, kerstomaatjes, feta en kikkererwten.
Als ontbijt maakte ik eens iets helemaal anders. Chocoladepannenkoeken gemaakt van zoete aardappel. Ook weer super lekker! Mijn vriend geloofde niet dat de pannenkoek van zoete aardappel gemaakt was. 🙂
Een zomerse lunch van aardbei, avocado, komkommernoedels en een limoendressing stond ook nog op het menu. Als ik het zo zie krijg ik terug honger. 🙂
Staat bij jullie ook soms spaghetti of rijst van groenten op het menu?

I was very curious about the cookbook ‘Inspiralized’. Almost everybody already knows zucchini pasta and we also put it on our menu often. But it seems I was stuck with zucchini to spiralize, I didn’t have inspiration to use other vegetables. This book has broaden my horizons, I discovered you can spiralize so many different vegetables!
The book is full of recipes with ‘spaghetti’ made of vegetables but also ‘vegetable rice’. I have a very simple ‘spiralizer’ at home that can only make 2 types of spaghetti, so I used the grater of my kitchen robot to make the vegetable rice.
The only disadvantage of the book is that it uses a special kind of spiralizer. But once you know which kind of knife in the book cuts which form, you’re all set to go!
I made dinner, lunch & breakfast & to be honest, it all tasted delicious! The recipes are easy to make, fast and you don’t need a lot of ingredients. There are also some very surprising combinations
of fruit & vegetables that I really liked. I recommend this book to everyone who wants to incorporate more veggies in their week menu & don’t want it to take a lot of time.
The first dish that we made was carrot spaghetti with cashew sauce. Yum!
Did you know that you can also spiralize the stem of broccoli? Zero waste! That’s how we like it!
Cucumber noodles are ideal for an easy lunch. I ate some leftover pasta with it, cherry tomatoes, feta & chickpeas.
A surprising combination of fruit & veggies was apple, kiwi, corn & salad with a honey mint dressing. Delicious!
For breakfast I tried something totally different; chocolate pancakes made of sweet potato. Again super yum! My boyfriend didn’t believe me when I told him that the pancakes were made of sweet potato. 🙂
A lunch with summer feeling was also on the menu: cucumber noodles with strawberries, avocado & lemon dressing. Mmm! The colorful photo says it all.
Do you also sometimes make spaghetti or rice from vegetables?
